Sufganiyot - recipe from old blog

Here is a different recipe that is really good, making some here in a little bit in fact! It's called "Sufganiyot" - what is it? ...

Jelly Doughnuts! MMMMMMM!!!!!!!

1 teaspoon dried yeast
1/4 teaspoon lukewarm milk or water
2 Tablespoons sugar
1 whole egg
1 egg yolk
3 Tablespoons sour cream or vegetable oil
pinch salt
2 - 3 drops vanilla
1 2/3 cups flour, more if necessary
oil for deep frying
jelly - apricot, red currant, raspberry (using strawberry today)
confectioner's sugar

Dissolve yeast in warm milk with 1 teaspoon sugar. Leave for 10 minutes or till it froths.

Beat rest of sugar with egg and yolk. Add sour cream or oil, salt, vanilla, and yeast mixture; beat well.

Fold flour in gradually, and continue beating till soft, smooth, elastic dough, adding more flour if necessary. Knead 5 minutes; sprinkle a little flour if sticky. Coat dough with oil; cover and rise till doubled in bulk, about 2 hours.

Knead dough again a few minutes, roll out to 1/4 inch thick. Cut into 2 inch rounds. Put a teaspoon of jam in center of one round, brush rim with water and cover with another round. Press edges together to seal. Arrange on floured tray; let rise 30 minutes.

Heat 1 1/2 inches oil to red hot. Drop in doughnuts a few at a time. Fry 3 - 4 minutes till brown; turn and fry on other side 1 minute more. Drain on paper towels. Sprinkle with confectioner's sugar and serve.
